A first-generation American of African and Caribbean descent, Chef Cynthia Chea Pean focuses on nutrient-dense, disease-fighting cuisine featuring ingredients, techniques and flavors of the African diaspora. As an avid traveler throughout Africa, the Caribbean and the United States, she takes every opportunity to expose herself to native foods and local traditions, adapting her recipes to honor the history and communities behind them.

Her innovative and unique globally inspired cuisine is beloved by A-list Hollywood celebrities, Tastemakers, and political icons.

Dr. KIMBERLY JEFFRIES LEONARD

BIOGRAPHY

Dr. Kimberly Jeffries Leonard, has a life-long commitment to public service exemplified throughout her successful professional, academic and civic endeavors. She is currently the 17th National President of The Links, Incorporated and The Links Foundation, Incorporated. Dr. Jeffries Leonard has over 25 years of applied health, minority health, and behavioral medicine research, evaluation, technical assistance (TA) and training experience specializing in health promotion and disease prevention. Dr. Jeffries Leonard’s broad background includes expertise in developing, implementing, evaluating and guiding public health and behavioral health programs, policies and related legislation with subject matter expertise in minority health, HIV/AIDS, substance abuse, cardiovascular disease, health disparities, health care reform, tribal issues, reentry and criminal justice issues, international behavioral health, co-occurring mental health and trauma, and women’s and adolescent services. She is the President and CEO of Envision Consulting, LLC, a boutique public health consulting firm specializing in strategic and innovative executive-level solutions for public, private and government entities, including strategic planning, program design and implementation, program/systems assessment and evaluation, and minority community engagement.

RECIPE

TOFU SCRAMBLE FLORENTINE

1 – 14 oz Extra Firm Tofu – *drained, pressed and crumbled
2 tablespoons extra virgin olive oil
½ medium onion – finely chopped
3 cloves garlic – minced
3 cups spinach
1 cup crimini mushrooms – sliced
½ yellow bell pepper – cored and chopped
¼ cup sundried tomatoes in olive oil and herbs– chopped (discard the olive oil)
1 bunch asparagus spears (do not use the bottom hard part of the spear)
2 tablespoons Afcavé Tofu Scramble Magic
Salt to taste
