Chef Adam Simmonds At The Megaro Hotel

A Michelin-Starred Visionary Introduces A Signature Dining Experience Defined By Innovation And Modern Flavor

Michelin-starred Chef Adam Simmonds’ innovative new dining concept is now open.

The Megaro Hotel in King’s Cross, in partnership with its Chef Patron, Michelin-starred Adam Simmonds, is delighted to announce the opening of its new signature restaurant — Voyage with Adam Simmonds.

Relaxed and informal, yet sophisticated, this innovative concept promises a combination of captivating tastes, bold flavours, and delightful textures — all underpinned by impeccable service.

Adam draws inspiration from Scandinavian design, characterized by minimalism, purity, and freshness. The result is a menu defined by natural, clean flavours that are light, elegant, and precise — blending traditional methods with modern, dynamic techniques.

A champion of seasonality, sustainability, and provenance, Adam takes his philosophy a step further at Voyage. Through foraging, fermenting, pickling, and preserving the finest seasonal produce, he maximizes flavour profiles from both land and sea.

At the heart of the menu is a seven-course tasting experience, rewritten each season to ensure that every dish reflects ingredients at their peak. Each course transitions through the five taste elements — sweet, salty, sour, bitter, and umami — creating plates that are both powerful and balanced. A five-course menu is also available for those seeking a shorter journey.

Guests preferring à la carte dining can enjoy three picture-perfect courses — starter, main, and dessert — drawn from the highlights of the tasting experience. Showcasing Adam’s signature style, the menu offers something to delight carnivores, pescatarians, and vegetarians alike.

Voyage’s knowledgeable hosts guide diners through carefully curated drink pairings, with four options available:
– Voyage: Premium wine selection
– Wine: Classic pairings
– Mixed: A blend of spirits and wines
– Non-alcoholic: Featuring a creative collection of mocktails designed by the Hokus Pokus bar team, led by bar manager Greg ‘Doc’ Chudzio

The restaurant’s aesthetic mirrors its culinary philosophy. Clean lines and minimalist Scandinavian décor create a space that feels both refined and welcoming. The light, airy colour palette and use of natural wood add warmth and intimacy to the setting.

Diners will immediately notice the absence of a barrier between the kitchen and the dining area, offering an honest, unfiltered view into the artistry behind each dish. Guests may sit close to the open kitchen to witness the craft in motion or choose a more serene corner for an intimate experience.

Meanwhile, Voyage’s discreet private dining room provides the ideal setting for business lunches, meetings, or small celebrations. Reminiscent of a train carriage, it accommodates up to twelve guests with a variety of bespoke menu options available.

An exceptional culinary talent, Adam Simmonds has helmed some of the UK’s most acclaimed kitchens. He trained under Raymond Blanc at Le Manoir aux Quat’Saisons before earning Michelin stars at Ynyshir Hall in Wales and Adam Simmonds at Danesfield House. More recently, he has been a leading advocate for sustainability and wellness in hospitality.

The opening of Voyage represents a dual journey — one that embodies both a singular culinary experience and the intimate story of Adam Simmonds’ personal evolution.

XAVIER DANIELS

BIO

Paintings are influenced by his experiences with brotherhood at both Morehouse and as a firefighter. In creating his art, he is actively thinking about the perception of black men and attempting to be a catalyst for a different view on the black male experience. According to Daniels, the conversations happening in popular culture about black males leave them invisible in discussions about themselves. The portraits of black men Daniels creates are large in an effort to symbolically assert black male presence into those conversations. His work has been shown around the world through Almine Rech and Richard Beavers Gallery. Xavier lives and works in Atlanta, Georgia.
